Stack of Pancakes Cake

Is it really 12 months since my baby's last birthday?  Well, this year I was stumped as to what to make him for his birthday cake.  All I knew was that he requested his favourite flavour - eggless chocolate (strange, as he doesn't have an egg allergy....  he just really loves this rich yet light cake!)  I decided to 'play a trick' on him; his ideal breakfast or dessert is a large stack of American style pancakes with syrup.  So that's exactly what this cake is.  I love how it turned out.  Even the maple syrup isn't real!!!

Happy 12th birthday to my beautiful boy!  I love you so very, very much.
